Important Recipe Notes
- If you’ve got extra taco beef from taco night, this is the perfect way to use it! It saves time and still tastes amazing.
- Make sure your tater tots get nice and golden before adding the toppings — it keeps them from getting soggy.
- Add toppings just before serving: Fresh toppings like pico de gallo, sour cream, and cilantro make the dish pop, but add them after baking so they stay fresh.
- You can change Monterey Jack cheese to cheddar, pepper jack, or a Mexican blend.
- Add black beans, corn, or diced tomatoes for extra flavor and color.
