  • 4 bone-in pork chops, ½–¾ inch thin cut
  • ½ pound green beans, rinsed and trimmed
  • 1 summer squash, quartered and cut into 2-inch pieces
  • 1 red bell pepper, cut into 1–2 inch pieces
  • ½ white onion, cut into quarters
  • 4 tbsp olive oil
  • 2 tbsp Italian seasoning
  • 1 tsp red pepper flakes
  • 1 tsp salt
  • Black pepper, to taste
  • ¼ cup grated parmesan
  • 3 tbsp shredded parmesan, for garnish

Step-by-Step Guide

1. Preheat the oven: 400°F.

2. Cut the vegetables and place them in a large bowl.

3. In a small bowl, combine olive oil, Italian seasoning, red pepper flakes, salt, and black pepper. Pour half over the vegetables with grated parmesan and toss. Set aside.

4. Pound to tenderize, then brush with the remaining seasoning mixture on both sides. Arrange on one half of a sheet pan.

5. Arrange vegetables and spread evenly on the other half of the pan.

6. Transfer to the oven for 8 minutes. Flip the pork chops and bake another 8 minutes.

7. Turn on the broiler high and broil for 5 minutes until the pork chops are golden and the veggies are lightly charred.

Serve and Enjoy!

Sprinkle shredded parmesan on top and enjoy warm.
