They’re a little spicy, a little smoky, and nice and creamy in the middle. I usually make these for game days, family get-togethers, or party appetizers.

Important Recipe Notes

  • Soften the cream cheese first. If it’s too cold, the filling won’t mix smoothly. Let it sit out for about 30 minutes, or microwave for 10–15 seconds.
  • Adjust the heat level. For less spice, remove the seeds and white parts from the jalapenos. For more heat, leave some seeds in.
  • Don’t overfill the cups. Fill just to the top of the dough. Overfilling can cause the mixture to spill over while baking.
  • Watch the bake time. Ovens can vary. Start checking at 13 minutes. The edges should be lightly golden brown.
  • Let them cool slightly before removing. Give them 5 minutes to set so they come out of the mini muffin tin more easily.
  • Grease the pan well. Even nonstick pans need a light spray to prevent sticking.
