Sloppy joes have always been one of my go-to meals when I need something simple and satisfying. So, if you’re on the lookout for a quick and delicious dinner idea that’s sure to impress your family (and maybe even make you feel a little fancy), let me introduce you to my new obsession: Sloppy Joe Enchilada Sliders!

These little gems combine the hearty goodness of classic sloppy joes with the zesty flair of enchiladas, making for a mouthwatering meal that’s perfect for any night of the week.

How to Make Sloppy Joe Enchilada Sliders

Ingredients you’ll need for this recipe
  • 1 lb of ground beef
  • 1 onion (diced)
  • 1 red bell pepper (diced)
  • 1 yellow bell pepper (diced)
  • 1 green bell pepper (diced)
  • 1 tsp cumin
  • 1 tsp onion powder

  • 1/3 cup of oatmeal
  • 1 10 oz can of red enchilada sauce
  • 1 tbsp of brown sugar
  • 8 slices of pepper jack cheese
  • 12 slider buns
  • Chopped scallions for topping

Step by Step Guide

1. In a large pan, toss in the ground beef, diced peppers, onion, and your seasonings. Cook over medium to high heat for about 7-10 minutes until the beef is browned and cooked through. Once it’s ready, drain any excess grease, then stir in the oatmeal.

2. Pour in the enchilada sauce and sprinkle the brown sugar over the mixture. Stir it all together, bring it to a boil, then let it simmer on low for about 15 minutes, stirring occasionally. Preheat your oven to 375°F (190°C) while this simmers away.
