Air Fryer Parmesan Truffle Fries

Fries are a forever favorite in our house, so I always keep this Parmesan Truffle Fries recipe on hand—it works well as a quick side dish for dinner or an easy snack.

I love how they turn out perfectly crispy on the outside and soft on the inside. The truffle oil gives them that restaurant-style flavor, and the Parmesan and parsley add just the right touch without going overboard.

How to Make Air Fryer Parmesan Truffle Fries

Ingredients you’ll need for this recipe
  • 4 medium russet potatoes
  • 2 tbsp olive oil
  • 2 tbsp truffle oil
  • ¼ cup shredded Parmesan cheese
  • ¼ tsp salt, or to taste
  • Chopped fresh parsley, for garnish

Step by Step Guide

1. Peel and cut the potatoes into fries (I use a mandolin when I want them extra thin, but hand-cut works just fine).

2. Soak the fries in cold water for 5 minutes to remove the extra starch—this helps them crisp up better.

3. Drain and pat dry the fries really well and toss them in olive oil

4. Then place them in your air fryer basket in a single layer.

5. Cook at 375°F for 35–40 minutes, shaking the basket once or twice to make sure they cook evenly.

6. While they’re cooking, shred the Parmesan and chop the parsley.

7. When the fries are done, transfer them to a bowl with the truffle oil and toss gently so they’re evenly coated.

8. Sprinkle with salt, Parmesan, and parsley, then serve right away while they’re hot and crispy.

Important Recipe Notes

  • Make sure to soak the fries in cold, iced water; it helps remove extra starch so they cook up crispier. Just 5 minutes makes a difference.
  • After soaking, make sure to dry the fries thoroughly with a clean towel or paper towels. Damp fries = soggy results.
  • Cook in a single layer if possible, or cook in batches. Crowding the basket can lead to uneven cooking.
  • Add truffle oil after cooking: Truffle oil is strong and loses flavor when heated, so always toss it with the fries after they’re done.
  • These fries are best enjoyed hot and fresh. The crispiness fades if they sit too long.
