Step-by-Step Guide
1. Preheat the oven to 325°F (163°C). Line an 8×8 baking dish with parchment paper, leaving an overhang for easy removal.
2. Mix the ground vanilla wafer cookies, melted butter, and brown sugar in a bowl.


3. Press the mixture evenly into the bottom of the baking dish to form the crust.


4. Bake the crust for 8–10 minutes, then remove it from the oven and let it cool.
5. In a separate bowl, beat together the cream cheese, sweetened condensed milk, lime zest, egg yolks, and lime juice until smooth.


6. Pour the filling over the cooled crust and smooth the top. Bake for 20–25 minutes, until the edges are set and the center is slightly jiggly.


7. Let the bars cool to room temperature, then refrigerate for at least 2 hours to fully set.
8. Whip the heavy cream and powdered sugar until soft peaks form.

9. Spread the whipped cream over the cooled bars and garnish with extra lime zest.


10. Slice into 16 bars and serve chilled.
