Important Recipe Notes
- Make sure to use freeze-dried strawberries, not fresh or frozen. They give the fudge flavor without adding extra moisture, which helps it set properly.
- Melt the white chocolate over low heat and stir often to prevent burning or seizing. Patience here is key!
- Using a food processor for the strawberries and condensed milk ensures the fudge is evenly pink and creamy.
- Line the pan with parchment paper so you can easily lift the fudge out when it’s set.
- Refrigerate for at least 4 hours for the fudge to firm up completely before cutting.
- Store the fudge in an airtight container in the fridge for up to a week. You can also freeze for longer storage.
- Use a sharp knife and wipe it clean between cuts for neat squares.
