Maple Roasted Sweet Potato Bites

Sweet potatoes have always been a favorite in our house—not just because they’re tasty, but because they’re healthy and easy to cook. These Sweet Potato Bites are sweet and crunchy finger food, with just a few ingredients, and ready in just 35 minutes.

This recipe works great as a party appetizer, a side dish for dinner, or a weekend snack for family gatherings. It’s an easy and delicious treat made with roasted sweet potato slices topped with melted marshmallows, crunchy pecans, and a drizzle of maple syrup.

How to Make Sweet Potato Bites

Ingredients you’ll need for this recipe
  • 2 sweet potatoes (about 1 lb)
  • 8 pecan halves
  • 4 medium marshmallows
  • 2 tbsp unsalted butter, melted
  • 2 tbsp maple syrup
  • 1/4 tsp salt

Step by Step Guide

1. Preheat your oven to 425°F (220°C).

2. Peel the sweet potatoes and cut each one into 4 even slices.

3. Put the slices in a bowl, pour the melted butter over them, sprinkle with salt, and mix so every slice is coated.

4. Place the sweet potatoes on a baking tray and bake for 15 minutes. Flip the slices and bake for another 10 minutes.

5. Turn on the grill or roast setting on your oven.

6. Drizzle the maple syrup over the sweet potato slices.

7. Cut each marshmallow in half and place them on top of the sweet potatoes.

8. Grill the sweet potatoes with marshmallows for 2-3 minutes, watching closely so they don’t burn. Take them out when the marshmallows are golden and toasted.

9. Put a pecan half on top of each slice and serve warm.
