5. Arrange the potatoes, carrots, and zucchini around the pork chops.

6. Drizzle the remaining ½ tbsp olive oil over the vegetables, then sprinkle with salt, pepper, and the remaining thyme.

Serve & Enjoy!

Important Recipe Notes
- Use thick pork chops for the best results. Thick, bone-in pork chops stay juicy and tender while baking and help prevent the meat from drying out.
- Cut the vegetables evenly. Try to keep the potatoes, carrots, and zucchini close in size so they cook at the same rate on the sheet pan.
- Don’t overcrowd the pan. Spread everything out in a single layer so the vegetables roast instead of steam. If the pan feels too full, use a second sheet pan.
- Watch the broiling step closely. Broiling helps caramelize the honey glaze, but it can burn quickly. Keep an eye on it during those last few minutes.
- Check the pork for doneness. Pork chops should reach an internal temperature of 145°F for safe and juicy results.
- Let the pork chops rest before serving. Allow them to sit for about 5 minutes after baking so the juices settle back into the meat.
- You can change vegetables to broccoli, green beans, or bell peppers if that’s what you have on hand.
