  • 1 zucchini
  • 2 tbsp olive oil
  • 3 tbsp honey
  • 1 ½ tbsp fresh thyme, chopped
  • ½ tsp pepper
  • ¼ tsp salt

1. Preheat the oven to 375°F.

2. Cut any larger potatoes in half if needed. Slice the zucchini into 2-inch pieces, then slice those in half.

3. In a small bowl, whisk together the honey, 1 ½ tbsp olive oil, and ½ tbsp fresh chopped thyme.

4. Arrange the pork chops on a large sheet pan and spread the honey mixture over the pork chops.
