Important Recipe Notes
- Try to cut the potatoes into 1-inch cubes and the steak into similar-sized chunks so everything cooks evenly.
- Don’t overcrowd the pan. Spread the steak and vegetables out in a single layer. If they are too close together, they will steam instead of roast.
- Flip halfway through cooking. Stir the vegetables and flip the steak pieces around the 10-minute mark to help them brown on all sides.
- If you like your steak more well done, leave it in a few extra minutes. For medium or medium-rare, check it early so it doesn’t overcook.
- If your potato cubes are a little larger, roast them for 5–10 minutes before adding the steak and other vegetables.
- Sprinkle the parmesan during the last few minutes of baking so it melts nicely without burning.
- Allow the steak to rest for about 5 minutes after baking. This helps keep it juicy.
