Important Recipe Notes
- Don’t overcook the shrimp – Shrimp cooks very fast. Once it turns light pink and opaque, it’s done. Overcooking will make it rubbery.
- Use fresh garlic and onion for best flavor – This is the base of your sauce, so don’t skip or rush this step. Let them soften and become fragrant.
- If you want a lighter sauce, you can reduce the heavy cream slightly or add a splash of pasta water to loosen it.
- Save some pasta water – A small amount of starchy pasta water helps the sauce cling better to the spaghetti and makes it extra silky.
- Add spinach last – Spinach wilts quickly, so add it at the end to keep its color and texture fresh.
- Taste before serving – Always adjust salt, pepper, and parmesan at the end since pesto and cheese already add saltiness.
- Serve immediately – This dish is best enjoyed fresh and creamy right after mixing the pasta with the sauce.
