Important Recipe Notes
- Using cooked rice works best for this recipe. Day-old rice is even better because it stays fluffy and doesn’t become mushy.
- Chicken sausage is already cooked, so you only need to brown it to add extra flavor.
- If you like a little more heat, add a pinch of cayenne pepper or a few dashes of your favorite hot sauce.
- Drain the diced tomatoes only if you prefer a drier casserole. Keeping the juices adds extra flavor and helps keep the rice moist.
- Taste the casserole before serving since Cajun seasonings can vary in saltiness. Adjust the salt and pepper if needed.
- You can swap the yellow bell pepper for red, orange, or green bell peppers depending on what you have on hand.
- Leftovers store well in an airtight container in the refrigerator for up to 3 days, making this a great meal prep recipe.
- Garnish with fresh green onions just before serving for the best color and fresh flavor.
