Step-by-Step Guide
1. Unwrap the hollow chocolate Easter eggs. Dip a sharp knife into hot water, wipe it dry, and carefully score along the seam of each egg. Repeat as needed until the eggs separate cleanly into halves.
Set the chocolate shells aside while you prepare the filling.
2. In a small bowl, mix the cookie crumbs with the melted butter until the mixture resembles damp sand.

Divide the mixture evenly among the chocolate egg halves. Press gently into the bottom of each shell to create a firm cookie crust.

3. In a mixing bowl, beat the softened cream cheese and powdered sugar until smooth and creamy.

In a separate bowl, whip the cold heavy cream with the vanilla extract until stiff peaks form.
Gently fold the whipped cream into the cream cheese mixture until everything is combined. The filling should be light, smooth, and fluffy.

4. Spoon or pipe the cheesecake filling over the cookie crust in each chocolate egg half.

Fill each shell to the top and smooth the surface if desired.
Place the cheesecakes in the refrigerator for at least 4 hours, or until the filling is set.
5. Once the cheesecakes are set, decorate them with the remaining cookie crumbs, mini chocolate eggs, or a drizzle of melted chocolate.

Serve & Enjoy!

Important Recipe Notes
- Separate the chocolate eggs carefully: Use a sharp knife warmed in hot water, then wipe it dry before scoring along the seam. Work slowly to prevent the chocolate shells from cracking.
- Use softened cream cheese: Let the cream cheese sit at room temperature before mixing. This helps create a smooth, creamy filling without lumps.
- Keep the heavy cream cold: Cold whipping cream is easier to whip and helps the cheesecake filling hold its shape.
- Carefully fold the whipped cream into the cream cheese mixture to keep the filling light and fluffy.
- Refrigerate the cheesecakes for at least 4 hours so the filling has time to set properly.
- Prepare the cheesecakes a day before Easter and keep them covered in the refrigerator until ready to serve.
- For the nicest appearance, add mini chocolate eggs, cookie crumbs, melted chocolate, or edible flowers shortly before serving.
- Store covered in the refrigerator for up to 2 days. For the best texture and appearance, enjoy within 24 hours.
- Serve these cheesecakes chilled, as the chocolate shells and creamy filling can soften when left at room temperature for too long.
