Important Recipe Notes

  • Be sure to drain the green beans well after blanching to prevent the casserole from becoming watery.
  • If using frozen green beans, thaw and pat them dry before adding them to the casserole.
  • For the best texture, add half of the crispy fried onions to the casserole mixture and save the rest for the topping.
  • Keep an eye on the casserole during the final 5–10 minutes of baking to ensure the onion topping turns golden brown without burning.
  • You can assemble the casserole up to 24 hours in advance. Cover and refrigerate, then bake when ready to serve.
  • If the casserole seems too thick before baking, add a splash of milk to loosen the mixture.
  • For extra flavor, stir in a small amount of shredded cheddar cheese or sautéed mushrooms before baking.
  • Allow the casserole to rest for 5 minutes after baking so it can set slightly and be easier to serve.
  • For the crispiest topping, add the remaining fried onions only during the last part of baking.
  • This recipe doubles easily for larger holiday gatherings and potlucks.
