How to Make Mediterranean Feta Bites

Ingredients you’ll need for this recipe
  • 15 Phyllo Shells
  • 1/4 cup crumbled feta cheese
  • 1/4 cup tomato, finely diced
  • 1/4 cup cucumber, finely chopped
  • 1 green onion, diced
  • 1 tbsp olive oil
  • 1 tsp lemon juice
  • 1/8 tsp dried basil
  • 1/8 tsp garlic powder
  • 1/8 tsp salt
  • 1/8 tsp black pepper
  • 1/8 tsp dried dill

Step by Step Guide

1. Chop the tomato, cucumber, and onion. You can peel the cucumber before chopping if you’d like.

2. Add the feta, tomato, cucumber, and onion to a small bowl.

3. Add the olive oil, lemon juice, and spices to a pinch bowl and stir to combine.

4. Pour the liquid seasoning blend over the other ingredients, and toss to combine.

5. Distribute the mixture evenly between the Phyllo Shells.

Serve and Enjoy!

Once assembled, plate them up and serve immediately—these bites are at their best when fresh, and your guests will love them!

To ensure your Mediterranean Feta Bites stay perfectly crisp, it’s best to assemble them just before serving. While you can prep the filling ahead of time, wait until the last moment to fill the Phyllo shells to avoid them becoming soggy.

Important Recipe Notes:

  • Use pre-made phyllo cups to save time! You’ll find them in the freezer or bakery section of most grocery stores.
  • Don’t overfill the cups — a little goes a long way and helps keep them neat and easy to eat.
  • Serve shortly after assembling for the crispiest texture. If they sit too long, the phyllo can soften.
  • Customize the filling with chopped cucumbers, roasted red peppers, or a drizzle of balsamic glaze for extra flavor.
  • Make it ahead tip: You can mix the filling a few hours ahead of time and store it in the fridge. Just spoon it into the phyllo cups right before serving.
  • For a vegetarian version, double-check that your feta cheese is made without animal rennet.
