Important Recipe Notes

  • Dice everything small. Cutting the roast beef and vegetables into small pieces helps the filling fit nicely into the phyllo cups and makes each bite easy to eat.
  • Cook the vegetables first. Let the peppers and onions soften in the skillet before adding the rest of the ingredients. This helps bring out their flavor and keeps them from tasting too crunchy.
  • Do not overfill the shells. Phyllo shells are small and delicate, so fill them just to the top. Overfilling can make them spill over while baking.
  • Bake just until warm and crisp. The phyllo shells are already baked, so you only need enough time to heat the filling and melt the cheese.
  • Serve them warm. These bites taste best right out of the oven while the shells are crisp and the cheese is melted.
