It’s a one-dish recipe that is perfect to bring for breakfast or brunch (which everyone is asking me for the recipe).

This is one of my favorite recipes to serve when I have family staying over or when I need something to bring for Christmas morning, Easter brunch, baby showers, or any special breakfast gathering.

How to Make Sausage and Gravy Biscuit Casserole

Ingredients you’ll need for this recipe
  • 1 lb. ground breakfast sausage
  • (1) 8 count refrigerated biscuits
  • 1/4 cup butter
  • 1/4 cup all purpose flour
  • 1/2 tsp. salt
  • 1/2 tsp. ground black pepper
  • Pinch of red pepper flakes
  • 2 cups whole milk
  • 6 large eggs
  • 1/4 cup heavy cream
  • 2 cups shredded cheddar cheese

Step-by-Step Guide

1. Preheat your oven to 350 degrees Fahrenheit. Spray a 9×13 baking dish with nonstick spray and set aside.

2. In a large skillet, cook and crumble the ground sausage until cooked through. Drain and set aside.

3. In a medium saucepan, heat the butter until melted.

4. Whisk in the flour and cook 1-2 minutes.

5. Add the salt, pepper, and red pepper flakes.

6. Slowly add the milk, whisking as you add.

7. Cook on medium heat, whisking frequently, until gravy thickens.

8. Take the biscuits and cut each one into quarters. Layer these in the bottom of the 9×13.

9. Take about 1/4 of the cooked crumbled sausage and stir it into the gravy.

10. Sprinkle the remaining sausage over top of the biscuits.

11. Sprinkle the shredded cheese over top.

12. In a medium mixing bowl, whisk together 6 eggs and the heavy cream.

13. Pour this over top of the biscuits, sausage, and cheese.

14. Finally, pour the gravy over top of everything.

15. Bake for 35-40 minutes, until cooked through. You can check by inserting a fork in the center and making sure the biscuit dough is cooked through.

Important Recipe Notes

  • Cut the biscuits into evenly sized pieces so they bake uniformly throughout the casserole.
  • Be sure to drain the cooked sausage well to prevent excess grease from making the casserole oily.
  • Whisk the gravy constantly while adding the milk to avoid lumps and create a smooth, creamy texture.
