Cheesecake Fruit Parfaits
These Cheesecake Parfaits are one of my favorite desserts when I need something easy but still want it to feel a little special. Layers of creamy cheesecake, crunchy graham crackers, and fresh fruit come together in individual servings that are perfect for parties, picnics, or a simple weeknight treat. Best of all, they’re a no bake dessert, which makes them even easier to throw together for last-minute gatherings!

How to Make Cheesecake Parfait

Step-by-Step Guide
1. Line out your parfait containers. Fill each one with about 2 heaping tablespoons of crushed graham crackers.

2. In the bowl of a stand mixer, combine the softened cream cheese and sugar. Mix to combine well.

3. Add in the heavy cream and whip until thoroughly combined, about 3 minutes on medium speed. Scrape the sides often.

4. Add in the vanilla, lemon juice, and lemon zest. Mix to combine.

5. Spoon the filling mixture into each trifle cup.

6. Top with the fresh fruit of your choice.

Important Recipe Notes:
- These parfaits can be assembled ahead of time! Simply layer the cheesecake filling and graham crackers, and store them in the fridge. Add the fresh fruit just before serving to keep it from getting soggy.
- For Fruit Options, berries, mango, kiwi, or even a mix of citrus work wonderfully. Just make sure to use fresh fruit for the best flavor.
- You can adjust the sweetness of the cheesecake filling based on your preference. If you prefer a sugar-free version, try using a sugar substitute like stevia or monk fruit sweetener.
- For a lighter and healthier version, swap out the cream cheese for Greek yogurt or a lighter cream cheese alternative. You can also use almond flour or whole-grain crumbs for a healthier crust. Fresh fruits like berries or peaches add natural sweetness and extra nutrients without the added sugar.
