How to Make Cheesecake Parfait

Ingredients you’ll need for this recipe
  • 1 ½ cup Graham cracker crumbs, crushed
  • 2 – 8 oz packages Cream Cheese, softened
  • 3 Tbsp Heavy Cream
  • 1 Tbsp Lemon Juice
  • 1 Tbsp Lemon Zest
  • 1 Tbsp Vanilla
  • 1 ½ cup Fresh Fruit (strawberries, blueberries, raspberries, blackberries or a mix)

Step-by-Step Guide

1. Line out your parfait containers.  Fill each one with about 2 heaping tablespoons of crushed graham crackers.

2. In the bowl of a stand mixer, combine the softened cream cheese and sugar.  Mix to combine well.

3. Add in the heavy cream and whip until thoroughly combined, about 3 minutes on medium speed.  Scrape the sides often. 

4. Add in the vanilla, lemon juice, and lemon zest.  Mix to combine. 

5. Spoon the filling mixture into each trifle cup. 

6. Top with the fresh fruit of your choice.

Important Recipe Notes:

  • These parfaits can be assembled ahead of time! Simply layer the cheesecake filling and graham crackers, and store them in the fridge. Add the fresh fruit just before serving to keep it from getting soggy.
  • For Fruit Options, berries, mango, kiwi, or even a mix of citrus work wonderfully. Just make sure to use fresh fruit for the best flavor.
  • You can adjust the sweetness of the cheesecake filling based on your preference. If you prefer a sugar-free version, try using a sugar substitute like stevia or monk fruit sweetener.
  • For a lighter and healthier version, swap out the cream cheese for Greek yogurt or a lighter cream cheese alternative. You can also use almond flour or whole-grain crumbs for a healthier crust. Fresh fruits like berries or peaches add natural sweetness and extra nutrients without the added sugar.
