How to Make FunFetti Cheesecake Bites?

Ingredients you’ll need for this recipe
  • 1 (8 oz.) package of Cream Cheese
  • ½ a stick of Butter (soft)
  • 2 cups of Funfetti Cake Mix
  • ½ a cup of Powdered Sugar
  • ¾ cup of Rainbow Sprinkles
  • Additional Sprinkles (optional)

Step-by-Step Guide

1. Start by adding your cream cheese, butter, cake mix, and powdered sugar to a large mixing bowl. You can add additional sprinkles if you wish, about a ½ cup, or just use what is in the cake mix.

Note: Heat treat your cake mix before using. Place cake mix in the microwave for one minute, stirring at the halfway point. Let cool completely.

    2. Mix on high until well combined. This takes a few minutes. It becomes crumbly before becoming smooth. Place in the fridge for an hour.

    3. Use your cookie dough scoop to remove even amounts of dough. Roll into balls.

    4. Immediately roll in your rainbow sprinkles and place back in the fridge until serving.

    Serve and Enjoy!

    Important Recipe Notes:

    • These cheesecake bites need time to firm up in the fridge, so be sure to let them chill for at least 2 hours before serving for the perfect texture.
    • For a smoother, creamier filling, make sure your cream cheese is softened to room temperature before mixing.
    • You can use any color of sprinkles to match the theme of your event, or even mix multiple colors for a fun, festive look!
    • Optional flavor add-ins: If you want to switch it up, add a splash of vanilla extract to the cheesecake filling for extra flavor, or even a bit of lemon zest for a citrusy twist.
    • These cheesecake bites are perfect for preparing in advance. Store them in an airtight container in the fridge for up to 3 days.
    • If you don’t have a mini muffin tin, you can roll them into balls and serve them as bite-sized treats without the need for molds.
