3. Spread mixture into a medium baking dish, 8×8 inches or smaller.. Top with the remaining 1/2 shredded cheese.

4. Bake for 15 minutes, then turn the broiler to high for an additional 1-2 minutes to get the cheese nice and bubbly.

5. Remove the pan from the oven, and top with sliced jalapenos, sliced green onion, and chopped cilantro.

Serve and Enjoy!

Serve warm with tortilla chips, corn chips, or your favorite dipper.

Important Recipe Notes:

  • Use freshly cooked bacon: For the best flavor and crunch, cook your bacon until crispy, then crumble it. Pre-cooked bacon bits won’t give you the same texture or smoky taste.
  • Shred your own cheese: Pre-shredded cheese often has anti-caking agents that affect melting. Shredding your own cheese helps it melt smoother and creamier.
  • Bean option: Refried beans give the dip a creamy base, but you can also mix in black beans or pinto beans for added texture.
  • Make it spicy: Add a dash of hot sauce, chopped jalapeños, or chili powder if you like extra heat.
  • Make it ahead: You can assemble the dip ahead of time and store it in the fridge. Just pop it in the oven when you’re ready to serve—perfect for parties or game days!
  • Serving tip: Serve it hot with tortilla chips, crackers, or even veggie sticks. It’s also great spooned over baked potatoes or nachos!
  • Leftovers: Store leftovers in an airtight container in the fridge for up to 3 days. Reheat in the oven or microwave before serving.
