Pancakes are a popular breakfast recipe, but sometimes we want to make something other than pancakes, and this sheet pan berry pancake is another perfect idea.

How to Make Mini Pancake Bites

  • 1 cup pancake mix
  • 3/4 cup water (or whatever your package directions suggest- we used Hungry Jack)
  • Mini chocolate chips, blueberries, sprinkles, or other add-ins

Step-by-Step Guide

1. Preheat your oven to 350 degrees Fahrenheit.

2. In a large mixing bowl, mix together the pancake mix according to the box directions.

3. Spray a mini muffin tin with nonstick spray.

4. Add the pancake mix to the muffin tin, filling about 3/4 full.

5. Add your add-ins to your pancakes- we did a few mini chocolate chips, or 2 blueberries, or a pinch of sprinkles.

6. Bake for 10 minutes.

7. Allow the pancake bites to cool and remove from the pan, enjoy!

Important Recipe Notes

  • Be careful not to overfill the mini muffin cups. Filling them about 3/4 full gives the pancake bites room to rise without overflowing.
  • Spray the muffin tin well with nonstick cooking spray to prevent sticking and make removal easier.
  • Different pancake mix brands may require slightly different amounts of water, so follow the package directions for the best texture.
  • Add only a small amount of mix-ins to each bite. Too many chocolate chips, blueberries, or sprinkles can make the pancake bites heavy and affect how they bake.
  • Check for doneness by lightly touching the tops. They should spring back when fully baked.
  • Let the pancake bites cool in the pan for a few minutes before removing them to help them hold their shape.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
  • These pancake bites freeze well. Place cooled bites in a freezer-safe bag and freeze for up to 2 months. Reheat in the microwave for a quick breakfast or snack.
