Important Recipe Notes

  • Toast the bread lightly so it’s crisp enough to hold its shape but still soft enough for little kids to bite.
  • Use a large star-shaped cookie cutter to get the best starfish shape. Save the bread scraps for homemade breadcrumbs or croutons.
  • If your peanut butter is thick, let it sit at room temperature for a few minutes so it’s easier to spread without tearing the bread.
  • Press the sandwich together gently to help keep the filling from squeezing out the sides.
  • Use just a small dab of peanut butter to attach the candy eyes so they stay in place.
  • You can use sunflower seed butter or another nut-free spread if serving at a nut-free school or to someone with a peanut allergy.
  • These sandwiches are best served fresh, but you can prepare them a few hours ahead and keep them covered in the refrigerator until ready to serve.
