Important Recipe Notes

  • Slice the beef as thinly as possible so it cooks quickly and stays tender in the oven.
  • Try to cut the peppers and onions into similar-sized strips so everything cooks evenly.
  • Don’t overcrowd the sheet pan. Spread everything into a single layer for the best roasted texture.
  • If your pan is too full, use two sheet pans instead of piling the ingredients together.
  • For extra flavor, let the beef and vegetables sit in the seasoning mixture for 15–20 minutes before baking.
  • You can use any color bell peppers you like for a more colorful and flavorful dish.
  • Warm the tortillas before serving to make them softer and easier to fold.
  • Leftovers store well in the refrigerator for up to 3 days in an airtight container.
  • These fajitas are great topped with sour cream, shredded cheese, salsa, avocado, or jalapeƱos.
