How to Make Strawberry Sprinkle Cupcakes

Ingredients you’ll need for this recipe
  • 12 strawberry cupcakes
  • ¼ cup sprinkles 
  • 3-4 tbsp pureed strawberries (about ½ cup diced strawberries)
  • ¼ cup (1 stick) butter, softened to room temperature
  • 1 ¾ cup powdered sugar
  • 4 strawberries, sliced

Step-by-Step Guide:

1. Slice and puree your strawberries. You can puree them in a food processor.

2. Use the frosting tip to cut out the center of each cupcake, then fill with sprinkles, and put the top of the center that you took out back into the cupcake, gently pushing down on it.

3. Add the butter and pureed strawberries to the bowl of a mixer (or medium bowl), and beat on high until creamy.

4. Add half the powdered sugar and mix in on low, then switch to medium. Repeat for the remainder of the powdered sugar, switching to high at the end.

5. Add frosting to a piping bag equipped with the tip that you used in step 2, and pipe frosting onto the cupcakes in a circular motion, starting from one side, around the cupcake, and meeting the end, then moving into the center and stopping.

6. Gently push a sliced strawberry onto the top of the frosted cupcake.

Important Recipe Notes

  • Use fresh strawberries for the puree to get the best flavor and natural pink color in the frosting.
  • Cut cupcake centers carefully: Use a frosting tip or small knife to avoid cracking the cupcakes.
  • Fill the cupcake holes lightly so the sprinkles don’t overflow when frosting is added.
  • If the frosting is too thick, add a teaspoon of milk to make it easier to pipe.
