1. Preheat the oven to 350 degrees.

2. Cut the mushrooms and green onions.

3. Line a small rimmed baking sheet with parchment paper, overlapping the edges.

4. Whisk together the eggs, milk, salt and pepper in a small bowl, then pour into the parchment lined baking sheet.

5. Sprinkle it with cheese, then bacon pieces, and mushrooms.

6. Carefully transfer the baking sheet to the oven and bake for 15 minutes.

7. Sprinkle diced green onions over the top, slice and serve.

Important Recipe Notes

  • Make sure to leave some parchment overhang so you can easily lift the frittata out of the pan without breaking it. This also helps with easy cleanup.
  • Don’t overbake: Keep an eye on it after 15 minutes. The eggs should be set but still soft in the center. Overbaking can make it dry and rubbery.
  • Beat the eggs and milk really well so the mixture is light and even. This helps give the frittata a soft, fluffy texture.
  • If your mushrooms or bacon are very raw or watery, you can lightly cook them first so they don’t release too much liquid while baking.
  • Spread the toppings evenly so every slice has a good mix of cheese, bacon, and veggies.
  • Let it rest before slicing: Give it 3–5 minutes after baking so it sets fully and slices cleanly.
  • You can swap bacon for ham or sausage, or skip meat for a vegetarian version. You can also add spinach, bell peppers, or tomatoes.
