Mini Beach Brownie Cups

How to Make Beach Brownie Cups?

Ingredients you’ll need for this recipe
  • 18.3 box of brownie mix
  • The water, eggs and oil the box calls for
  • 1 cup (2 sticks) unsalted butter, softened
  • 6 cups powdered sugar
  • Blue food color
  • 48 round gummy candies
  • 48 Teddy graham cookies

Step-by-Step

1. Preheat your oven to 350 degrees.

2. In a large bowl combine the brownie mix with the water, eggs and oil your particular box mix calls for.

3. Fill your mini muffin tin ¾ of the way up ( you may need to do this in batches)

4. Bake for 15 minutes or until a toothpick inserted in the middle comes out clean.

5. While the brownie cups are still warm, use a teaspoon to press down the center to create a cup shape.

6. Set aside to cool completely.

7. To make the buttercream, you need an electric hand mixer to whip up the butter.

8. Next, add the powdered sugar slowly to the butter.

9. Add some blue food coloring.

10. Whip until all combined.

11. Add more blue food coloring if the color is not the shade you desire.

12. Spoon or pipe your buttercream into the brownie cups.

13. Top each one with a gummy ring candy.

14. Place a teddy graham into the middle of each candy ring.

Important Recipe Notes

  • Let the brownie cups cool fully before adding buttercream to prevent it from melting.
  • For a cleaner look, use a piping bag to fill the cups with buttercream.
  • When creating the cup shape in warm brownies, press gently to avoid breaking them.

  • Add blue food coloring gradually to get your desired shade of “water.”
