Step-by-Step Guide
1. In a large bowl, whisk together the self-rising flour, brown sugar, baking powder, cinnamon, ginger, and allspice until everything is evenly mixed.

2. In a separate bowl, whisk the milk, egg, and olive oil until smooth.

3. Pour the wet ingredients into the dry ingredients. Stir gently until just combined. A few small lumps are perfectly fine, so try not to overmix the batter. This helps keep the pancakes light and fluffy.

4. Place a non-stick skillet or griddle over medium heat. Lightly coat it with a little olive oil.
5. Pour about ¼ cup of batter onto the hot skillet for each pancake. Cook for about 2–3 minutes, or until bubbles appear on the surface and the edges look set. Flip and cook for another 1–2 minutes, until golden brown. Adjust the heat if the pancakes are browning too quickly.

6. Transfer the pancakes to a plate and keep them warm while you cook the remaining batter. Serve with maple syrup, whipped cream, fruit, chopped nuts, and gingerbread sprinkles for a festive finish.
