1. Slice zucchini into ½-¾ inch disks, then cut in half.


2. Toss the zucchini slices in a bowl with olive oil.

3. In another bowl, stir together panko, Parmesan, flour, and garlic powder.


4. Sprinkle the breadcrumb mix over the zucchini and toss to coat every piece.

5. Preheat your air fryer to 400°F. Place the zucchini in an even layer in the basket. Air fry for 10 minutes, shaking halfway through.

Important Recipe Notes
- Try to slice the zucchini evenly so they cook at the same rate. Thicker pieces may need an extra minute or two in the air fryer.
