How to Make Raspberry Chocolate Truffles

Ingredients you’ll need for this recipe
  • 2 cups semi-sweet chocolate chips (We used Enjoy Life Semi-Sweet Gluten-Free Dairy-Free)
  • 1/4 cup whipping cream (We used Silk Heavy Whipping Cream Alternative)
  • 3/4 cup freeze-dried raspberries

Ingredients you’ll need for the coating
  • 1 cup chocolate chips (We used Enjoy Life Semi-Sweet Gluten-Free Dairy-Free)
  • 3 tbsp freeze-dried raspberries

Step-by-Step Guide

1. In a microwave-safe bowl, combine the 2 cups of chocolate chips and the whipping cream. Microwave in 30-second increments, stirring between each one, until the mixture is smooth and melted.

2. Blend the freeze-dried raspberries until they’re completely crushed. Stir the raspberry powder into the melted chocolate mixture.

3. Use a cookie scoop to portion out the truffle batter. Then, roll each portion into a ball about the size of a walnut.

4. In a separate bowl, melt the remaining chocolate chips until smooth. Dip each truffle into the melted chocolate, then sprinkle a bit of crushed freeze-dried raspberries on top.

5. If your truffle batter is too soft to handle, chill it in the fridge for 10-15 minutes to firm it up before rolling.
