How to Make Raspberry Cheesecake Cookies
Ingredients you’ll need for this recipe

Step-by-Step Guide
1. Preheat the oven to 350° and line a large baking sheet with parchment paper.
2. In a large bowl, mix the cake mix, vanilla, egg, butter, and cream cheese using a hand mixer for 2-3 minutes.

3. Add the white chocolate chips and raspberries. Use your hands to fold and combine, being careful not to crush too many raspberries.

4. Scoop 1 1/2-inch balls and place them on the baking sheet, leaving about 2 inches between each. Press down slightly with your hand or the bottom of a flat glass.

5. Bake for 10-12 minutes. Let them sit on the baking sheet for another 10 minutes before serving.

Serve and Enjoy!

Important Recipe Notes
- Make sure the cream cheese and butter are softened to room temperature. This helps the dough mix smoothly and prevents lumps.
- Using your hands to fold in the raspberries and white chocolate chips helps keep the cookies soft and ensures the berries don’t get too crushed.
- Use freeze-dried raspberries. Don’t substitute fresh raspberries, as they will make the dough too wet.
- Scoop 1 1/2-inch balls for even baking. Smaller cookies may overbake and dry out.
- Gently press the top of each cookie with your palm or a flat glass to get the classic shape.
- Baking time: Check at 10 minutes, but ovens vary. Cookies should be set on the edges but still soft in the center—they firm up as they cool.
- Store in an airtight container at room temperature for 2-3 days. For longer storage, freeze baked cookies for up to 2 months.
